Zucchini and Dino Kale Soup

Easy to make and so good for you!




BT's Zucchini and Dino Kale Soup


Ingredients:

1 large leek

2 ribs celery

2 1/2 pounds ( ~1 kg) any type of zucchini

10 leaves dino kale

2 tablespoon olive oil

1 tablespoon harissa

2 cloves garlic

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cumin

1/4 teaspoon ground coriander

1 teaspoon dry thyme

4 sprigs fresh za'atar or oregano (you can use 1 teaspoon dry if fresh is not available)

2 bay leaves

1 teaspoon kosher salt

1/2 teaspoon sugar

6 cups (1.5 l) filtered water

ground black pepper to taste


Directions:

Rough chop leek, celery and zucchini

Add olive oil to heavy gauge cocotte

Add harissa, cloves, nutmeg, cumin and coriander

Turn flame to medium and fry spices for 1 minutes

Add leek and celery and sauté for 3-4 minutes

Add zucchini and sauté for 5 minutes more

Remove central vein from kale leaves

Chop kale

Add salt and thyme, za'atar and sugar

Add kale and water

Add bay leaves

Bring to boil and immediately turn to flame to low

Simmer covered for 20 minutes

Remove bay leaves

Purée soup with wand blender

Add pepper to taste


Serve hot or cold with lemon wedges and croutons
