White and Yellow Soup



It's no secret that I often choose vegetables because of their color. Today I was smitten with the white acorn squash, a.k.a. Table Queen Squash, Mashed Potato Squash, Danish Squash. It is very mild and nutty. I also used a zucchini varietal that is deep yellow with dark green markings and very light green flesh. I imagined the soup would be quite white in color but it turned out to be a beautiful lemon yellow with small white bits. Hence the name.


BT's White and Yellow Soup


Ingredients:

For soup:

2 white acorn squash

3 yellow-green zucchini

1 large leek - white part only

1 stalk celery

1 green apple

2 cloves garlic - crushed

1 small red chili - seeds and veins removed

1/4 teaspoon cloves

1/8 teaspoon grated mace

1 teaspoon dried chervil

1 tablespoon coconut oil

1 tablespoon Biondi Pisco

1 teaspoon kosher salt

1 teaspoon sugar

6 cups (1.4 l) filtered water

For garnish

3 tablespoons fresh parsley - chopped

2 tablespoon fresh mint - chopped

1 large scallion - sliced thin

2 tablespoons pepitas

1 tablespoon vegetable oil

sprinkle kosher salt

Directions:

Place acorn squash in baking dish and roast for 30 minutes at 400 F. (200 C.)

Wash leek and celery thoroughly and chop very fine

Add coconut oil to heavy gauge cocotte and place on medium flame

When oil has melted add leek and celery

Dice chili into very small pieces and add to pot

Sauté 2-3 minutes or until leeks become translucent

Rough chop zucchini

Peel and chop apple

Add zucchini, apple and garlic to pot

Sauté 2-3 minutes

Add salt, mace, cloves and chervil

Stir

Add Pisco and sugar

Boil water and add to pot

Reduce heat to low and cook for 20 minutes

Remove peel and seeds from roasted squash

Add squash to soup

Cook 5 minutes

Remove from heat

Purée soup with a wand blender

Add vegetable oil to shallow pan and turn flame on medium

Add pepitas and fry until they begin to pop

Remove pan from heat and lightly salt the seeds

Mix together parsley, mint and scallion


To serve:

Place 2 ladles of soup in a bowl (preferably one you love)

Add a teaspoon of herb mixture

Add a 1/2 teaspoon of fried pepitas
