Split Pea Soup

One of the easiest and tastiest soups ever


BT's Vegetarian Split Pea Soup


Ingredients:

1 pound (450 grams) green split peas

2 medium carrots

1 medium yellow onion

1 tablespoon vegetable oil

1 rounded tablespoon marjoram

2 large bay leaves

8 cups (1.9 l) filtered water

1 teaspoon (4.5 grams) salt

Black pepper to taste


Directions:

Wash peas thoroughly in cold water to remove any grit or small stones

Peel onion and dice into small pieces

Peel carrots and dice into small pieces

Place pressure cooker on medium low flame

Add oil and onions

Sauté until onions are translucent

Add salt and pepper and mix

Add water and peas and carrots

Stir to bring peas up from the bottom of the pot

Add marjoram and bay leaf

Put lid securely on pressure cooker

Turn flame on high

When valve on pressure cooker begins to whistle and release steam, turn the flame down to low and let cook for 20 minutes

After 20 minutes turn off heat and let pressure cooker cool down

When pressure is released open lid

The soup will be watery on top

Remove bay leaves

Gently stir soup to mix peas thoroughly

Taste for salt and pepper

Serve with chopped green onion and croutons. Second day servings are thicker and go very well with cottage cheese and yellow mustard - unusual but very yummy
