BT's Spinach And Zucchini With Mushroom And Feta
Ingredients:
2 small zucchini
1 small bunch spinach
2 cloves garlic
1 large shallot
1/2 cup (120 ml) white wine
2 tablespoon olive oil
12 small mushrooms (any variety)
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon thyme
1/4 teaspoon oregano
1/8 teaspoon peperoncino flakes
1/4 teaspoon kosher salt
3 tablespoon crumbled feta
1 tablespoon chopped pistachios (optional)
fresh ground pepper
Directions:
Rough chop mushrooms
Add 1/2 tablespoon olive oil to pan
Flash fry mushrooms
When brown, transfer to bowl and sprinkle with oregano, thyme and a pinch of salt
Reserve
Wash spinach thoroughly and let dry
Add remaining olive oil to pan and turn flame to medium high
Dice shallot
Slice zucchini into coins and add to pan
Brown zucchini on both sides
When caramelized, add shallot and sauté for 1 minute
Add spinach and garlic, peperoncino, nutmeg and cloves
Sauté for 2 minutes
Add wine and reduce flame to low
Simmer until spinach is wilted
Purée vegetable mixture until smooth
Place in bowl
Top with mushroom, feta and nuts, if using
