This is simple to make and is a great accompaniment to almost any main.
BT's Spicy White Beans With Chard
Ingredients:
2 cups (350 grams) cooked white beans (navy, cannellini)
1/2 cup (120 ml) olive oil
4 shallots
3 large stalk green chard
1/8 teaspoon peperoncino flakes
1 lemon
2 cloves garlic
3 sprigs fresh thyme
1 teaspoon kosher salt
ground black pepper
Directions:
Soak 2/3 cup dry beans in cold water for 2 hours
Place soaked beans in a pot and barely cover with water
Bring pot to boil
Reduce heat and cover and cook for 45 minutes until beans are tender
Drain and reserve
Finely chop shallots and garlic
Add half of the olive oil to a frying pan
Heat oil on medium low heat
Add shallots and garlic and peperoncino flakes to pan
Sauté until vegetables are translucent
Chiffonade chop chard and add to pan
Reduce heat to low and cook for 5 minutes
Add cooked beans and salt
Heat through
Transfer contents to oven proof dish
Pour remainder of olive oil over contents
Add 3 grinds pepper and fresh thyme sprigs
Bake at 350 F. (175 C.) for 15 minutes
Remove thyme
Cut lemon in half
Squeeze juice of one half over beans
Serve
