Special Orange Soup For RH

Orange soup - מרק כתום (pronounced ma-rak ka-tome) is standard Israeli fare. It can be made with carrots, sweet potatoes, squash - more or less anything that is orange. For Rosh Hashanah I wanted to do something extra to make the soup a little more festive and symbolic of the New Year.



BT's Special For Rosh Hashanah Orange Soup


Ingredients:

1 medium leek

1 small potato

6 large carrots - peeled and rough chopped

2 small zucchini

2 large cloves garlic - crushed

1 piece of raw turmeric root - grated

2 ribs celery

1 1/2 tablespoons vegetable oil or ghee

1 tablespoon harissa

1/8 teaspoon cloves

1/8 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon dried thyme

1/2 teaspoon sugar

1 bay leaf

1 teaspoon kosher salt

ground black pepper

6 cups (1.5 l) water

2 tablespoons calvados

1 tablespoon olive oil

1 small mild chili

2 tablespoon honey

1 very crisp small apple - peeled

10 fresh sage leaves


Directions:

Thoroughly wash leek and celery and rough chop

Add vegetable oil to large heavy gauge pot

Place pot on medium flame

Add harissa, turmeric, garlic, cinnamon, nutmeg and cloves to fat

Stir 1 minute and add leek and celery

Sauté 2 minutes

Rough chop zucchini and add to pot

Sauté 1 minute

Add salt, sugar and thyme and several grinds of pepper

Sauté 1 minute

Boil water and add to pot

Add carrots

Add bay leaf and cover

Reduce flame to low and simmer for 15 minutes

Remove bay leaf

Reserve

Peel and rough chop potato

Boil potato in separate pot for 10 minutes

Remove from heat and reserve potato and boiling water

Purée contents of large pot with a wand blender

Into a large bowl strain puréed contents through a sieve or chinois

Discard pulp

Add strained liquid back into large pot

Add potato water

Rice cooked potato and add to soup

Taste for salt and pepper

Add calvados to soup and heat on very low flame

While soup is heating:

Dice apple into very fine pieces

Cut chili into thin rings

Add olive oil and chili rings to small fry pan

Sauté chili for 1 minute on medium flame

Add sage leaves and fry until leaves are beginning to crisp

Add honey

Add a pinch of salt

Remove from heat


Serve soup with apple and chili/sage/honey mixture - it has a kick!
