Simple Grilled Shrimp and Dill Feta Pasta

When the days get longer my appetite for long hours in the kitchen becomes radically reduced. Fortunately or unfortunately, my appetite for food does not decrease pro rata. So in the late spring and early summer I begin to think about grilling and making meals that are much lighter but still satisfying. Below is a recipe that combines salty feta, briny olives and sweet prawns. It is quite simple to make and always a crowd pleaser in our house.




BT's Simple Grilled Shrimp and Dill Feta Pasta


Ingredients:

Marinade:

1 tablespoon dijon mustard

1 teaspoon kosher salt

1 tablespoon chopped dill

1 tablespoon Greek oregano

1/2 lemon - juiced

3 tablespoons Greek olive oil

Shrimp:

36 medium sized prawns - shells on, heads removed

Pasta:

2 cubanelle peppers

1 small red onion

1/2 pound (250 grams) cherry tomatoes

1/3 pound (150 grams) goat or sheep feta in brine

1/3 cup kalamata olives

1 tablespoon Greek oregano

2 tablespoon chopped dill

2 tablespoon chopped parsley

1 lemon

1/2 cup (120 ml) Greek olive oil

1/2 teaspoon kosher salt

1 pound (450 grams) dried orecchiette or radiatori

water for boiling pasta


Directions:

Make marinade. Add to rectangular baking dish large enough to hold skewers

Devein prawns

Thread the prawns onto wooden skewers

Place skewers in marinade

Refrigerate for approximately 1 hour

While prawns are marinating clean and dice peppers

Slice cherry tomatoes into quarters

Dice onion into small pieces

Chop dill and parsley

Place peppers, tomatoes, onions and herbs into shallow, wide mouth bowl

Add oregano and salt

Crumble feta cheese over vegetables

Add olives

Pour olive oil over salad

Zest lemon and then juice

Add zest and juice to bowl

Set aside

Remove prawns from refrigerator 1/2 hour before grilling

Cook pasta in salted water until al dente - approximately 8-9 minutes

When pasta is cooking grill prawns - approximately 5 minutes

Using slotted spoon, (do not use colander) lift cooked pasta from boiling water and add one spoon at a time to bowl. Some cooking water will be caught in the pasta and will heat up the oil and lemon dressing

When all the pasta has been incorporated serve immediately with grilled skewers
