It is summer and very hot and even I don't feel like cooking. But if I don't get something green to eat everyday, I start to fade. Thank goodness, I like almost all things green.
This is a very easy to prepare side dish. Takes a few minutes and it is so good for you.
BT's Simple Cabbage With Zucchini
Ingredients:
1 small head green cabbage
2 medium zucchini - any variety
2 cloves garlic crushed
1 red chili - veins and seeds removed
1 teaspoon oregano
2 tablespoon fruity olive oil
1/4 teaspoon kosher salt
ground black pepper
1/8 teaspoon ground green cardamom (optional)
Directions:
Quarter cabbage and place in ice water for half an hour to remove debris
Remove and let drain thoroughly
Rough chop cabbage and reserve
Add olive oil to frying pan and turn flame to medium low
Chop chili into rings
Slice zucchini into rounds
When oil begins to sizzle layer the zucchini slice on bottom of pan
Leave 2 to 3 minutes to get a good char on the underside
Using a fork turn zucchini over, slice by slice
Add garlic and chili
Leave 1 minute
Add oregano and salt and cabbage
Using a spatula bring zucchini slices up from the bottom and rest the on the top of the cabbage letting the cabbage caramelize
Add 3-4 grinds of black pepper
Reduce the flame to low and cover pan
Simmer for 3-4 minutes or until cabbage is tender but not soft
Sprinkle with cardamom before (if using) serving
