Nothing is more comforting and satisfying than a bowl of beef stew. Everyone has their favorite ingredients, from peas to Irish stout to chilis. I prefer my stew quite simple. My mother made her stew using a pressure cooker, probably because she was pressed for time with 4 children to feed. I bake my stew in the oven, long and slow.
BT's Simple Beef Stew
Ingredients:
2 pounds (.9 kilo) well marbled stew meat cut into 1 inch (2.5 cm) cubes
1 large yellow onion
2 or 3 large carrots
3 large low starch potatoes
1 cup (128 grams) cooked white navy beans
4 tablespoons vegetable oil
1/8 teaspoon peperoncino flakes
2 tablespoons white flour
3.5 ounces (100 grams) tomato paste
1 scant teaspoon sugar
4 cups (1 l) water
kosher salt and ground black pepper
Directions:
In a heavy gauge cocotte add half of the oil and the peperoncino
Heat on medium flame
Dice onions into small pieces and add to pot
Cook until onions begin to caramelize
Lightly salt
Remove onions and reserve
Salt beef cubes
Drench cubes in flour
Turn flame on medium high
Add remainder of oil
When oil begins to sizzle add beef - may have to do this in two batches
Fry until meat is very well browned
Return onions to pot
Add tomato paste and sugar and mix well
Add several grinds of black pepper
Add water
Cover cocotte
Place in oven at 325 F. (160 C.)
Peel potatoes and carrots. Chop into bite size pieces.
When stew has been cooking for 90 minutes, remove from oven and add vegetables and beans
If liquid has evaporated add another cup (240 ml) of water
Return cocotte to oven and cook for another 90 minutes
