Salmon With Asparagus And Pasta

We bought 500 grams of sushi grade salmon as a treat to ward off the blues. It has been a difficult two weeks - sirens, bomb shelters, an endless barrage of heightened discourse on social media, sadness and off course, many, many disruptions.


So, when you don't know if you have the time to make it to the m'mad (bomb shelter) before the missiles land, it is wise to make food that doesn't need precise timing.


The sushi was good but we had about 225 grams leftover. Not really enough to feed two people, so Isaac suggested we use the fish and the few remaining pieces of asparagus and combines them with pasta in a cream sauce. This is not a new idea but I wanted to share my recipe since it is so easy and takes about 20 minutes - tops.




BT's Salmon With Asparagus And Pasta


Ingredients:

250 grams pasta (rigatoni, fusilli, radiatori)

250 grams sushi grade salmon - skinned

5 thin spears asparagus - blanched

2 shallots

1 clove garlic

1 tablespoon olive oil

1 tablespoon unsalted butter

4 ounces (125 ml) cooking cream

6 1/2 ounces (200 ml) white wine

1/2 teaspoon sugar (optional)

3 sprigs fresh thyme

1 teaspoon chopped fresh dill

1/4 teaspoon lemon zest

1 teaspoon kosher salt

ground black pepper

fresh grated parmesan cheese (optional)


Directions:

Add olive oil and butter to a small saucepan

Turn flame to medium low

Finely chop shallots and add to pan

Sauté 3 minutes

Add sprinkle of salt

Turn flame to medium

Add wine and sugar and continue sautéing for 2 minutes

Add cream and thyme

Reduce flame to medium low

Cut salmon into bite size pieces

Chop asparagus

Add salmon and asparagus to sauce

Cover and reduce heat to low

Poach salmon for 3 minutes and then remove from flame

Add cream

In a separate pot add salt to 6 cups (1.5 l) water

Bring to boil

Cook pasta according to instructions on package

When pasta is cooked, drain and add to serving bowl

Add fish and sauce to bowl

Toss

Add lemon zest and dill (and cheese if using)

Add several grinds of pepper
