Roasted Kabocha Squash and Tomatoes

Good side for a party.


BT's Roasted Kabocha Squash and Tomatoes


Ingredients:

1 medium kabocha squash

10 ripe roma tomatoes

1/4 teaspoon whole coriander seeds

1/8 teaspoon ground cloves

1/8 teaspoon cayenne

3 tablespoons olive oil

4 cloves crushed garlic

1 lemon - juiced

1 bunch cilantro

salt and pepper to taste


Directions:

Wash tomatoes and cut in half lengthwise

Place tomatoes in roasted dish with 1 tablespoon oil, sprinkle of salt and garlic

Roast at 400 F. (200 C.) for 30 minutes

Roast squash whole at same time as tomatoes, also for 30 minutes

Remove vegetables from oven and let squash cool

Cut open squash and remove seeds

Slice in wedges

Remove peel and place wedges in a shallow bowl

Toast coriander seeds on high heat for 1 minute - grind

Combine coriander, cloves and cayenne and rest of olive oil

Place vegetables in a bowl

Pour oil mixture over vegetables

Lightly salt

Drizzle lemon juice on top

Chop cilantro and add to dish


Serve hot or room temperature
