Goldie's Pesach Komish
Ingredients:
3 eggs - room temperature
3/4 cup (180 ml) vegetable oil
2 tablespoon potato starch
3/4 cup (112 grams) cake meal
1/4 cup (37 grams) matzoh meal
3/4 cup (78 grams) sugar
3/4 cup nuts (80 grams) almonds
1/2 teaspoon salt
1 teaspoon cinnamon
Sugar and cinnamon for post baking
Directions:
Preheat oven to 350 F. (170 C.)
Beat eggs
Add sugar and salt and beat well
Grind almonds to a light crumb - do not over process
Mix together, cinnamon, matzoh meal, cake meal, potato starch, salt and nuts
Add dry ingredients to wet and mix well
Shape into 2 rolls
Bake approximately 20 minutes
Remove rolls but leave oven on
Move rolls to cutting board and slice on a diagonal while still warm
Add sugar and cinnamon to a shallow bowl (3 measures sugar to 1 cinnamon)
Dip each slice (both sides) in sugar/cinnamon and place on cookie sheet
Return to the oven
Turn off heat
Let dry
