This is one of the best recipes to come out of my Baba's kitchen on the farm. At the end of summer when the beans were harvested, they were "put up" for the winter. These beans are sweet and pungent. Long after my grandmother passed, my uncle continued to make them. Here's to you Uncle Morris.
Babba's Mustard Bean Pickles
Ingredients:
2-3 cups (300-450 grams) yellow string beans
1 cup (225 grams) white sugar
1/2 cup (120 ml) white vinegar
1/2 cup (120 ml) boiling water
2 tablespoons flour
2 tablespoons dry mustard
1 teaspoon celery seed
1 teaspoons turmeric
Directions:
Clean beans and remove ends
Cook beans in salted water until they are tender
Sterilize sealer jar with hot water
Combine sugar, flour, mustard, celery seed and turmeric in a saucepan
Add boiling water to vinegar and add to dry ingredients
Cook sauce over low heat until it is thick
When beans are cooked, place in sealer jar
Add sauce
Beans will keep for several months if seal is unbroken
Once open, keep in fridge
