I am a purist. I eat my chicken soup without the chicken. While the meat is tender and delicious, and I like it all by itself, for me it is a distraction to the soup. So I am often faced with a container of "leftover" boiled chicken.
Boiled chicken was something that made me run from the room when I was a child. Scary. Silly me. I really didn't understand what I was missing. And I am sure my parents were quite happy not having to share.
But today is a different day. We have BT's Everyday Tomato Sauce in the freezer. And we have a few yellow zucchini - and some okra. Time to make that chicken into something yummy.
BT's Leftover Chicken Version I
Ingredients:
1/2 pound (200 grams) leftover chicken meat
1 tablespoon olive oil
2 yellow zucchini
10 small okra pods
20 cherry tomatoes - halved lengthwise
3 cloves garlic - crushed
1 tablespoon chopped fresh za'atar (or oregano)
1/8 teaspoon peperoncino flakes
1/4 teaspoon kosher salt
ground black pepper
Directions:
Remove chicken meat from bones
Rough chop and reserve
Add olive oil to frying pan
Place pan on medium flame
Slice zucchini in quarters
Slice okra in halves
Add zucchini in single layer to hot oil
Sauté until bottom of zucchini begins to brown
Add okra and cook 1 minute
Add garlic, peperoncino and za'atar
Sauté 1 minute
Add tomatoes
Add salt
Sauté 2 minutes
Reduce heat to low
Add chicken and heat - approximately 1-1 1/2 minutes
