Latkes - Classic

When I make latkes, I make a lot. Everyone in our family can put away a healthy portion and I grate everything by hand. When we have guests, latke making can be an intense couple of hours of work. So I was very pleased when my children asked for the recipe. At last, some latke makers who can also help me before a party.


Even though the latke making was successful, I was surprised to find out that my youngest considered the recipe as traditional oral lore and never wrote it down. Three years in a row I dictated it over the phone. Finally, I caved and wrote it out and sent it in an email.



Isaac’s Last Chance for Recipe Latkes


Ingredients:

3 very large or 6 small Yukon Gold or low starch potatoes

3 eggs

1 teaspoon kosher salt

1/4-1/2 cup (35-65 grams) flour

1 large sweet onion.

1 tablespoon lemon juice

Vegetable oil (lots) for frying


Directions:

Fill large bowl with cold water

Add 1 tablespoon of lemon juice

Peel potatoes and grate potatoes - use medium gauge - into acidulated water

When all potatoes are grated pour the contents into a colander

Rinse thoroughly with cold water to remove starch.

Shake off excess water

Put grated potatoes in bowl

Add eggs one at a time, mixing thoroughly at each step

Add salt

Grate onion - small gauge - into mix and stir

Sprinkle half of the flour over the top of the potatoes and mix making sure there are no lump

If mixture still liquidity add flour until the egg is not runny

If possible, use cast iron pan - it holds the heat steady

Pour 1/4 inch (.6 cm) oil into cast iron pan

Turn flame on to medium

Test the oil by dropping a tiny bit of batter into pan

If it sizzles the oil is ready

Spoon potatoes into pan keeping the latkes separate (don't overcrowd)

Fry on one side until golden brown - about 3 minutes

Flip and fry 1-2 more minutes

Place finished latkes on paper towel to absorb excess oil

Eat


Four serving ideas:

Out of the pan as your mother is making them

With sour cream and applesauce

Nestled in with a roast - they absorb the juices

As an alternative to blini - they are great with caviar


Note:

Latkes can be made earlier and reheated but for best results, eat immediately
