Perhaps there is nothing more comforting than this Ashkenazi dish made of buckwheat groats and noodles, that can be found at every Kosher Deli and at the Shabbat dinner table.
BT's Kasha Varneshkes:
Ingredients:
1 1/2 cups (192 grams) kasha (buckwheat groats)
4 tablespoons vegetable oil
1 egg
1/2 pound (225 grams) pasta shells or bowties
4 medium yellow onions
3 cups boiling water for kasha
2 teaspoon salt
Directions:
Heat oven to 350 F. (170 C.)
In an heavy gauge pot add 1 tablespoon (15 ml) oil and egg
Mix oil and egg together and add kasha
Turn flame onto medium and sauté groats until they are covered in oil/egg mixture
Add 1 teaspoon (4 grams) salt and boiling water
Cover with lid and immediately place in oven for 20 minutes
While kasha is cooking add remaining oil to frying pan
Peel and chop onions and add to oil
Fry onions until translucent
Sprinkle with salt
Cook pasta until al dente
When kasha is cooked remove from oven and add pasta and onions
Kasha can be eaten immediately or reheated. It also freezes well.
