Hot Meat Borscht

This soup is a meal in a bowl. Punch up your iron levels in the middle of winter.



BT's Hot Meat Borscht


Ingredients:

1 1/4 pounds (500 grams) osso buco or marrow bone with meat

3 large beets

2 large potatoes

1 tablespoon vegetable oil

1 small yellow onion

1/2 cup (100-120 grams) sugar

1/2 cup (120 ml) lemon juice

3 teaspoons salt

8 cups (1.9 l) filtered water

small bunch fresh dill

labane


Directions:

In a heavy gauge cocotte add oil

Heat oil on high

When oil is hot place osso bucco in pot to sear

Cook on each side approximately 3-4 minutes

Turn flame down to medium

Dice onion into small pieces and add to pot

Add salt and stir for 2 minutes

Boil water and add to meat

Peel beets and cut into eighths

Add beets to soup

Add lemon juice and sugar

Cook on medium for 45 minutes

Peel and eighth potatoes

Add potatoes to soup

Cook for another 30 minutes

Taste for salt, lemon juice and sugar. Add as needed

Serve soup with fresh dill and labne
