Herbaceous Black Rice and Salmon

Recently I have changed my basic salmon recipe. For years I baked the salmon in the oven smothered in mustard, oil, capers and thyme. I still do this on days when it is too inclement to cook outside but since we are fortunate enough to have fair weather most of the year, I have switched to grilling it with kosher salt and lemon. The fire does the magic.


I have also moved away from my standard Rice with Potatoes and Fava as an accompaniment. It is still a favorite but it needs a crowd and these days our gatherings are much smaller.


I have been trying out different types of rice: red Chinese, Italian nerone, jade and of course, wild rice which is really a grass.


This recipe calls for Forbidden Rice (Chinese Black Rice) but can be made with any type of rice or quinoa, wheat berries or barley.



BT's Herbaceous Black Rice and Salmon


Ingredients:

For Rice:

1 cup (200 grams) Forbidden Rice

1 3/4 cups (~430 ml) water

1 teaspoon kosher salt

1 small bunch parsley

1 small bunch cilantro

4 sprigs dill

3 scallions

1 red chili

2 tablespoon olive oil

For Fish:

1 salmon fillet (~2 pounds/1 kilo)

1 large lemon

2 tablespoon fruity olive oil

3 sprigs fresh thyme

1 teaspoon kosher salt

3-4 grinds black pepper

For Sauce:

1 tablespoon labne

2 tablespoons mayonnaise

1 tablespoon heavy cream

1 grated cucumber

1 clove garlic - crushed

1/2 lemon - juiced

pinch of salt


Directions:

Rice:

Wash rice thoroughly

Add water and rice to saucepan

Add pinch of salt

Bring to a boil

Reduce flame to low and simmer for 25-30 minutes

Turn off flame and leave rice to steam for 5-10 minutes more

While rice is cooking, clean herbs

Cut scallion into very thin coins

Fine chop parsley, cilantro and dill

Combine herbs in a bowl and add oil and salt

Cut chili into rings and add to herbs

When rice is cooked add to herb mix

Fish:

Cover wire rack with aluminum foil

Cut lemon slices very thin and lay on top of foil

Place fillet skin side down on lemon slices

Cover fish in olive oil

Sprinkle kosher salt over surface of fish

Add pepper

Distribute thyme across surface of fish

Grill on medium for 20-25 minutes

Sauce:

Mix together mayonnaise and cream

Add labne and mix until smooth

Add grated cucumber and garlic

Add salt and lemon juice
