Hamantaschen

Little three-cornered cookies to celebrate the holiday of Purim. Get your costumes on!


BT's Best Tasting Hamantaschen


Ingredients:

Dough:

4 eggs

1 1/2 cups (192 grams) sugar

1 cup oil (240 ml)

2 rounded teaspoons baking powder

4 - 4 1/2 cups (540 grams) flour

orange zest

1 teaspoons salt

Filling:

1 1/4 pounds (567 grams) pitted prunes

1/2 pound (227 grams) dried apricots

4 small lemon - juice and zest

Glaze:

1 egg

1 teaspoon vegetable oil


Directions:

Grind prunes, lemon zest, orange zest and apricots in a food processor

Move contents to a bowl

Add lemon juice, cover and leave one to two days in the fridge

Combine all dough ingredients

Dough will be sticky

Flour rolling surface well

Divide dough into four batches

Roll one piece of dough at one time

Cut circles with a 2 quart (500 ml) container lid

Place 1 teaspoon (5 grams) of filling in each round of dough

Pinch together to make 3 corner cookie.

Beat the egg until frothy, add oil

Brush this on each hamantash before baking


Bake at 350 F. (170 C.) for 10 to 15 minutes
