Grilled Zabar and Squash

Great for outdoor dinners and dish easy to make for a crowd.


BT's Grilled Zabar, Squash and Pumpkin


Ingredients:

1 small pumpkin

3 mini squash

1 ripe zabar (cactus fruit)

2 tablespoons apple cider vinegar

1 tablespoon vegetable oil

grated mace

1/4 teaspoon cinnamon

1/8 teaspoon ground cloves

ground black pepper

1/2 teaspoon kosher salt

2 tablespoons honey

1/2 lemon


Directions:

Slice pumpkin in wedges - remove seeds

Wash squash thoroughly and slice in half horizontally - leave peel attached

Wash zabar and cut in half

Mix oil, mace, cloves, cinnamon, pepper, salt and vinegar

Add vegetables and let marinate 1 hour

Grill over low heat until charred and cooked through

Drizzle honey over fruit and vegetables when they are still hot

Top with squeeze of lemon
