BT's Gouda Mac & Cheese With Grilled Tomato Crust
Ingredients:
~1 pound (225- 250 grams) dry macaroni
1 cup (85 grams) grated aged gouda cheese
2 tablespoons butter plus 1 teaspoon
3 tablespoons flour
1/2 teaspoon dry mustard powder
1/4 teaspoon cayenne
1 pinch nutmeg
1 1/2 cups (360 ml) whole milk
3 medium tomatoes
3 tablespoon finely chopped parsley
2 cloves garlic - crushed
1 tablespoon olive oil
4 tablespoons toasted bread crumbs
1 teaspoon kosher salt
Directions:
Cook pasta according to instructions on the package.
Drain and add 1/2 teaspoon of butter. Cover and reserve.
Heat milk in saucepan over low flame until tepid
Remove from heat
In separate saucepan melt 2 tablespoon butter on low heat
Add mustard, cayenne, nutmeg and flour to butter and mix thoroughly (roux)
Cook roux on low heat for 2 minutes, stirring constantly
Pour 1/3 of tepid milk into roux and whisk briskly to prevent lumps
When roux is thoroughly incorporated, add remainder of milk
Turn flame up to medium and stir while sauce thickens
Test sauce - if it coats the back of a spoon evenly, it is done
Add cheddar cheese and salt - stir
Combine cheese sauce and pasta and pour into a medium shallow baking dish
Slice tomatoes crosswise
Place slices on surface of pasta
Mix breadcrumbs, garlic and parsley
Sprinkle on top of tomatoes
Sprinkle olive oil over the crumbs
Place in oven on high rack
Broil for 3-4 minutes or until crumbs are browned
Serve with BT's Fennel and Cucumber Salad
