Fresh Mango and Habanero Salsa


BT’s Mango and Habanero Salsa

Ingredients:

2 large ripe Haden mangos

2-3 habanero chilis – dependent on your heat tolerance

1/2 red onion

5 or 6 sprigs cilantro

1-ounce (30 ml) tequila

1 teaspoon sugar

pinch of kosher salt

1 tablespoon water

Directions:

Peel and rough chop mangos

Dice red onion

Slice chilis including veins and seeds

Place mangos, onion and chilis in pot with sugar and water

Turn heat on medium flame

Cook until mangos begin to break down (dissolve)

Add tequila and cilantro

Continue cooking until contents resemble thick soup

Remove from heat

Put sieve over a bowl

Pour contents into sieve

Press the solids against the sides to maximize volume of concentrate

Pour concentrate (salsa) into a jar

Serve hot or cold
