French Toast is the perfect brunch dish and especially when there is a surplus of challah in the house. Most families have a favorite version whether it is made at home or eaten out. I prefer my French Toast to be very simple with no added flavorings like vanilla or cinnamon. This preference is inherited from my father who ate French Toast at least twice a week - usually on the nights when he worked late - and was very much a simple and straightforward man.
However, despite its simplicity, there is a method to making it golden on the outside, fluffy and not too dry or too wet.
BT's Dad's French Toast
Ingredients: (1 serving)
3 slices challah from middle of loaf (1-2 days old)
2 medium/large eggs
1/2 teaspoon sugar
1/2 teaspoon table salt
3 tablespoon water
2 tablespoons vegetable oil
1 tablespoon butter
Directions:
Cut each slice of bread in half - 6 pieces
Crack eggs into shallow bowl and whisk
Add water, sugar and salt and whisk again
Place cast iron frying pan on medium heat
When pan is hot add oil
Dip each piece of bread in egg wash on both sides - do not leave to soak
Lay each dipped piece in oil - it should sizzle
Add butter to pan
Fry for 2 minutes until golden brown
Flip and fry other side for 90 seconds
Remove from pan and serve immediately
Serve with warmed maple syrup
