Fregola With Basil and Pistachios



I keep making this dish. It never gets old. Yesterday I cooked fragola and wheat berries. Added dried cranberries, dried apricots, raisins, parsley, dill and mint. A little red onion and a small stick of celery. Toasted pistachios. It doesn't have to be complicated. Just needs to be balanced. Acid and sweet, bitter and salty. Briny and fatty.
