Farfel Muffins

These were my father's favorite Passover dish. My mother made them everyday. Best served right out of the oven.


BT's Dad's Farfel Muffins


Ingredients:

6 cups (600 grams) matzoh farfel

6 cups (1.45 l) boiling water

6 eggs

6 tablespoons vegetable oil

3 tablespoons oil for pan

1 1/2 teaspoons salt


Preheat oven to 400 F. (200 C.)

Put farfel in a mixing bowl

Add boiling water, then salt and oil

Let soak and cool

When water is completely absorbed add eggs one at a time

Beating thoroughly at every stage

Oil muffin tins generously and place in oven to heat

When really hot, fill muffin tins

Bake for 30 minutes

The muffins should be golden brown and fluffy
