I love chili. I love all kinds of chili. And sometime when the spirit moves me, I will experiment. But for the most part I crave a certain predictable taste. So when I feel the hankering I make this recipe.
NB: Chili on its own is great but with this side salad it takes the taste to whole other level
BT's Easy Beef and Bean Chili
Ingredients:
For the Chili
1 1/4 pounds (500 grams) ground beef
1 cup (128 grams) cooked red kidney beans
1 medium yellow onion - diced into small pieces
4 cloves garlic - crushed
2 tablespoons vegetable oil
3 tablespoons chili powder
1 teaspoon cayenne pepper
2 tablespoons ground cumin
1 tablespoon sweet paprika
1 teaspoon smoked paprika
1 tablespoon dried thyme
1 tablespoon dried oregano
1/2 teaspoon cinnamon
1 cup (240 ml) red wine
2 tablespoons tomato paste
1 teaspoon sugar
1 cup (240 ml) water
For the Salad:
4 leaves bib or romaine lettuce
2 ripe hass avocados
1 small red onion
1 red cubanelle pepper
1 medium bunch cilantro
1 cup (128 grams) cherry tomatoes - halved
2 tablespoons vegetable oil
2 limes juiced
kosher salt and fresh ground pepper
Directions:
For the Chili:
In a heavy gauge pot or Dutch oven, add oil and garlic
Turn flame on to medium and when oil is hot onions
When onions have caramelized add ground beef and cook until it is no longer red
Add chili powder, cayenne pepper, cumin, paprika (both), thyme, oregano and cinnamon
Turn heat down to medium low and continue cooking for 2 minutes
Add red wine, tomato paste and sugar and cook until alcohol dissipates
Add beans
Add water and turn heat down to low and cook for 10 more minutes
For the salad:
Chop all salad ingredients and toss with oil, lime juice and salt
