Coffee Cake With Lemon

BT's Coffee Cake With Lemon


Ingredients:

3 cups (384 grams) white flour

1 cup (128 grams) sugar

3 eggs

1 cup butter (128 grams) melted butter

1 cup (240 ml) whole milk

3 teaspoon double acting baking powder

3/4 cup (156 grams) raisins or currants

1 teaspoon salt

juice of 2 lemons

zest of one lemon


Directions:

Preheat oven to 350 F. (170 C.)

Sift together flour, sugar, baking and salt

In a mixing bowl add eggs, milk, butter and lemon zest

Mix on medium for 2 minutes

Add dry ingredients to mixer and continue mixing for 2-3 minutes

Turn mixer on to low setting

Add raisins (currants) and lemon juice

Bake in a 10 inch (25 cm) springform pan or bundt pan for 1 hour

Test cake with a toothpick. If it comes out clean remove from oven. If cake needs more time, add in 5 minute intervals
