In small Jewish communities on the prairies it was customary for everyone to have "a little something to eat" after morning prayers on Rosh Hashanah (New Year). During my grandparents time this meant chopped herring and a shot of whiskey. This recipe dates to the Avenue F. Synagogue where my mother helped in the preparation of this treat for everyone to share.
Avenue F. Chopped Schmaltz Herring
Ingredients:
1 brined schmaltz herring (high fat content)
1 apple
1 small onion
1 slice stale bread
1-2 tablespoon vinegar (white or apple cider)
2 hard boiled eggs
2 tablespoon sugar
Directions:
Clean fish
Place in cold water to soak for 24 hours to remove salt
Change water at least 3 times
Remove fish from soaking water and rinse thoroughly
Remove outer skin
Remove head, central bony spine and small bones
Soak bread in vinegar
Rough chop onion
Rough chop apple
Add fish, onion, apple, bread and sugar to food processor or food mill
Process until ingredients well incorporated but not paste
Remove fish from processor and add to bowl
Finely chop egg and add to fish
Place contents in a sealer jar to cure for 3-4 days
Keep in refrigerator
