Recently our scanner broke and we had to travel to a suburb of Tel Aviv called B'nei Brak to get it fixed. B'nei Brak is a religious community and a very poor one. The urban planning is non-existent. Office towers and small factories stand cheek and jowl against tenements and schools.
On our way we passed many outdoor vegetable markets and the watermelon on the stands caught my eye. One third of the price it was in town. We dropped off the scanner and stopped on the way back to pick up the melon.
Sadly, the watermelon had seen better days but the cabbage was bright green and the zucchini were just the right size and a very deep green. So I bought some.
When we got home I thought that for dinner I would make zucchini drenched in garlic and olive oil. One of my standards and one of my favorites.
But the cabbage was so green I wanted to eat it that night as well. I went back and forth - cabbage, zucchini, cabbage, zucchini, both. I finally decided on both but not as separate dishes but in the same dish.
Cabbage and zucchini are unlikely mates but I think this turned out very well.
BT's Cabbage and Zucchini Combo
Ingredients:
1/2 head of very fresh and firm green cabbage
2 medium sized dark green zucchini
1 medium yellow summer squash
2 poquito squash
6 cloves garlic - crushed
1/3 cup (80 ml) fruity olive oil
1/4 teaspoon peperoncino flakes
1/2 teaspoon dried oregano
1 tablespoon sundried cherry tomatoes
salt and pepper to taste
Directions:
Chiffonade the cabbage into thin strips
Slice zucchini and squash into rounds
Add 1/2 of the olive oil to a shallow frying pan
Turn heat on to medium
When oil is hot add cabbage all at once
Stir-fry until cabbage is bright green
Remove from heat
Add three grinds of black pepper and sprinkle with peperoncino
Remove cabbage from pan and reserve
Into the same pan add remainder of oil
Turn heat on to medium
Layer half of the zucchini in bottom of pan
Let fry until the rounds begin to brown
Add remainder of zucchini and garlic
Using spatulat lift bottom layer to the top so that all the rounds have a chance to brown
Add salt and oregano
When squash is almost down add reserved cabbage and sundried tomatoes
Toss over heat until the vegetables are mixed but not broken
Serve immediately
