Butter Tarts

Prairie Classic.


BT's Butter Tarts


Ingredients:

Filling:

1/2 cup butter

1 1/2 cups brown sugar

1/4 cups melted butter

2 tablespoons maple syrup

2 eggs

1 tbsp vinegar

1 tsp vanilla

1 cup currants

Pastry:

See Pie Crust recipe.

Need half recipe for tarts



Directions:

Preheat oven to 350 F. (170 C.)

Roll out pastry. Cut into 3 inch (8 cm) circles.

Place pastry circles in muffin tin - no papers

Mix together all filling ingredients (except currants) in a saucepan

Heat filling on low for 1 minute until sugar melts

Remove from burner and let cool

Wash currants thoroughly and add to other wet ingredients

Add mixture to pastry cups. Fill cups 2/3 full.

Bake 15 minutes or until golden brown.
