Blueberries are a luxury here. With very little water and high temperatures, growing berries in Israel is difficult. Exactly the opposite is true in Canada. Berries grow on bushes everywhere and many of the best berries, like Saskatoons are wild. I grew up with chokecherries, Saskatoons, blackberries, cranberries, currants, raspberries and gooseberries. Pies, jams, jellies, were very much a part of the diet.
So, even though they are a very precious commodity in Neve Tzedek, I splurge and use fresh berries when I make these muffins.
BT's Blueberry Muffins
Ingredients:
2 cups (300 grams) all purpose flour
3 teaspoons baking powder
1/2 cup (113 grams) butter
3/4 cup (170 grams) white sugar
1/2 teaspoon salt
2 eggs
1/2 cup (120 ml) milk
splash of white vinegar
1 teaspoon vanilla
2 cup (280 grams) blueberries
Directions:
Preheat oven to 400 F. (200 C.)
Fill muffin tins with cupcake papers
Cream butter and sugar
Beat eggs and add to butter/sugar
Add salt
Coat the berries in flour
Add vinegar to milk - it will sour and give leavening to batter
Add half of dry ingredients to wet and mix
Add milk and incorporate
Add remained flour
Add blueberries
Spoon into paper cups
Fill just below rim
Bake for 20 to 30 minutes or until golden brown on top
