Beef Curry

BT's Beef Curry


Ingredients:

2.2 pounds (1 kilos) beef stew

2 tablespoons ghee

1/4 teaspoon nigella seeds

1/4 teaspoon fenugreek

1/4 teaspoon black mustard seeds

1/4 teaspoon cayenne

1/4 teaspoon whole coriander seeds

2 tablespoons garam masala

2 tablespoons curry powder

1 teaspoon kosher salt

3 cloves garlic crushed

1 cup (200 grams) fresh tomatoes

1 14 ounce (400 grams) canned whole tomatoes

pinch of sugar

1 medium yellow onion

2 sprigs fresh thyme

1 cup (240 ml) coconut cream


Directions:

Preheat oven to 350 F (170 C.)

In a heavy gauge cocotte add half of ghee and turn heat on to medium

Add nigella, fenugreek, mustard and coriander and fry for 1 minute

Add onion and garlic and fry for 3 minutes

Remove spices and onion and reserve

Add remainder of ghee to cocotte and turn heat up to high

Add meat

Brown - about 3 minutes

Lower heat to medium

Add fresh garam masala and curry powder

Stir and cook for 2 minutes

Add spice/onion mix

Add fresh tomatoes and canned tomatoes

Add sugar and thyme

Place lid on pot and put in oven for one hour

Remove pot and add coconut cream

Return to oven for 1 and half hours
